The 48-year-old man had been out with his 23-year-old son in the area. They were last drinking in Bar M on Lime Street, into the early hours of Sunday 8 January.
Detectives understand that the victim's son had been assaulted and then, the victim himself had been chased by a group of four or five men along Elliott Street and then Wareing Street.
By the time the victim reached Upper George Street it is believed he was being chased by two men.
He was then seriously assaulted. He has been taken to hospital where he remains sedated and in a critical condition.
The man's son suffered facial injuries.
Detective Sergeant Joanne Clawson said: "This was a very serious assault and a man is now fighting for his life as a result.
"The attack was savage and may well have been out of public view. Anyone who had been in the Tyldesley area and may be able to assist the inquiry in any way should call us.
"We urge any witnesses to get in touch."
