Chef John Quigley's Easy & Quick Valentine's Recipe

Des is cooking dinner for his girlfriend so we got Red Onion Chef Patron John Quigley in to help him out. Check out the recipe below.

Chef Patron John Quigley recipe guide to an easy valentines meal.

 

Asparagus and goats cheese salad with aged balsamic vinegar 

Serves 2Ingredients

8 spears of asparagus
Lge handful of rocket leaves
100g of crumbled goats cheese
½ avocado sliced
2 tbsp balsamic vinegar
Salt n pepper
Heat grill to hot, place asparagus on grill tray and grill asparagus for 3 min till lightly charred. When cool toss in bowl with remaining ings and arrange in centre of plate.

Lemon, ginger and honey chicken.

Serves 2
PRE-HEAT OVEN TO 180c
Ingredients 
2 x chicken breasts skin on
2 tbsp olive oil 
1 tbsp ginger, peeled and finely chopped 
1/2 tsp red chilli, finely chopped 
Juice and rind of 1 lemon 
1 tbsp honey 
a dash of soy sauce 
Cup of water
2 tbsp chopped flatleaf parsley
Lge handful of baby potatoes halved
Heat a non stick frying pan add the olive oil to the pan and heat the oil. Season the chicken and add to the pan. Cook over a medium heat for about five minutes, until it is coloured all over. Sprinkle over ginger, chilli, lemon juice and rind, soy, potatoes, water and honey, cover and bake in the oven for 2o min. 

Chocolate Fondue

Serves 2
Ingredients
Serves: 4
200g plain chocolate
100ml double cream
Pieces of fruit: strawberries, pineapple, raspberries, banana, biscuits and marshmallows
Place chocolate and cream in microwaveable container and heat for 1 min remove and stir, heat for a further min and stir. Heat for a further 30 secs if required.
